Here's a hearty, vibrant, flavor bomb of a salad that comes together in just 12 minutes. We love the fact that all you have to do to get it ready is to toss all the ingredients together in one big bowl. No cooking or dirtying of pots or pans required. It features great northern canned beans, tomatoes, celery, scallions, olive oil, lemon juice, and fresh sage. It's crunchy, refreshing, and oh-so-satisfying, the perfect appetizer for any dinner party. If you have any left over sage, to store it, wrap it in a paper towel, seal in a plastic bag and refrigerate for up to four days.

Ingredients

Canned great northern beans

15¾ oz, rinsed and drained

Tomato

3 cup(s), seeded and chopped

Celery

3 Tbsp, chopped

Scallions

2 Tbsp, sliced

Olive oil

1 Tbsp, extra-virgin

Fresh lemon juice

1 Tbsp

Fresh sage

1½ tsp, chopped

Table salt

¼ tsp

Black pepper

¼ tsp

Instructions

  1. Combine all ingredients in a bowl; toss gently. Garnish with sage, if desired. Yield: 4 servings (serving size: 1 cup).
