White Bean and Tomato Salad

To store fresh sage, wrap it in a paper towel, seal in a plastic bag and refrigerate for up to four days.
canned great northern beans15 ¾ oz, rinsed and drained
fresh tomato(es)3 cup(s), seeded and chopped
uncooked celery3 Tbsp, chopped
uncooked scallion(s)2 Tbsp, sliced
olive oil1 Tbsp, extra-virgin
fresh lemon juice1 Tbsp
fresh sage1 ½ tsp, chopped
table salt¼ tsp
black pepper¼ tsp
- Combine all ingredients in a bowl; toss gently. Garnish with sage, if desired. Yield: 4 servings (serving size: 1 cup).
