Wasabi Shrimp-Stuffed Avocado

This Japanese-inspired stuffed avocado half is fabulous on its own but is also great paired with salted edamame and/or some sushi. Boil or steam your own shrimp, or buy already cooked shrimp from your supermarket. If you remove the avocado seed and the indentation in your avocado half is on the small side, eat a spoonful of the avocado flesh to create a bigger opening.
Ingredients
Light mayonnaise
2 tsp
Prepared wasabi paste
2 drop(s), or to taste
Low sodium soy sauce
1 drop(s), or to taste
Avocado
½ item(s), seeded
Cooked frozen shrimp
3 medium
Cucumber
½ Tbsp, Persian-variety, thinly sliced into half moons
Radishes
¼ small, thinly sliced into half moons
Fresh mint leaves
1 tsp
Table salt
1 pinch(es), or to taste (optional)
Black pepper
1 pinch(es), or to taste (optional)

In a small cup, combine the mayo, soy sauce, and wasabi. Place the shrimp in the avocado half and garnish with the cucumber, radish, and mint; spoon the mayo-mixture over top. Season with the salt and pepper (optional).
