We spiked these savory mashed potatoes with wasabi powder, and wow, do they have fantastic flavor. They also get their creaminess from an irresistible mixture of reduced-fat milk and sour cream, as well as a touch of butter. Fresh chives and a little bit of salt help bring everything together. We call for adding 1 tsp. wasabi powder, but feel free to increase that amount if you and your guests are feeling bold. These potatoes are excellent with roast chicken, pork, or beef; you'll want to scale everything up so you can keep a batch in the fridge for a handy side at all times.


Ingredients
Uncooked potato
4 medium, peeled and cut into large chunks (about 2 lbs)
2% reduced fat milk
½ cup(s)
Wasabi powder
1 tsp, or more to taste
Reduced fat sour cream
2 Tbsp
Salted butter
1 Tbsp
Chives
1 Tbsp, fresh, minced
Table salt
½ tsp
Instructions

Boil potatoes in a large pot of water over high heat until very tender when pricked with a fork, about 15 to 20 minutes; drain and mash potatoes with a hand masher or electric mixer.

Heat milk in a small saucepan over medium heat for 5 minutes; add wasabi powder and stir to dissolve. Add milk mixture, sour cream, butter, chives and salt to potatoes; stir to combine. Yields a generous 1/2 cup per serving.
