Silken tofu

Self-rising flour

In a blender or food processor, puree the tofu until smooth.

In a large bowl, combine the flour and salt. Add the pureed tofu. With a wooden spoon or spatula, stir until dough begins to come together. Then, with hands, knead dough for 1 to 2 minutes, until it becomes a mostly smooth ball. If dough is too sticky to knead, dust hands with a bit of flour.

Divide and shape dough into logs for breadsticks, rounds for pizza, or ropes for pretzels. Bake at 375°F for 15 to 25 minutes on a parchment-lined baking sheet, until golden and cooked through in the center. Broil on High for more browning on top, if desired. Serve warm.
