Olive oil

Uncooked bell pepper(s)

Uncooked onion(s)

1 medium, chopped

Garlic clove(s)

4 medium clove(s), minced

Raw skinless turkey breast

¾ pound(s), ground

Canned diced tomatoes

Canned black beans

15½ oz, rinsed and drained

Cremini mushroom(s)

2 cup(s), or white variety, thickly sliced

Chili powder

Ground cumin

2 tsp

Dried oregano

Instructions

  1. Heat oil in Dutch oven over medium heat. Add bell pepper, onion, and garlic; cook, stirring, until onion is softened, about 5 minutes. Add turkey and cook, breaking it apart with wooden spoon, until no longer pink, about 5 minutes.
  2. Add tomatoes, beans, mushrooms, chili powder, cumin, oregano, and salt to Dutch oven; bring to boil. Reduce heat and simmer, covered, until vegetables are tender, about 30 minutes.
  3. Per serving: about 1 1/4 cups
