Thai Peanut-Ginger Dipping Sauce

This homemade recipe will work great as a dipping sauce for grilled chicken or beef skewers, spring rolls, or cucumber sticks, or even as a thick dressing to your Thai-inspired salads. Soy sauce, lime, ginger, garlic, and red pepper flakes come together to bring your favorite Thai flavors to any dish. You can even add some fresh chopped mint or cilantro to up the ante, if desired. If the sauce is too thick, add a little water as necessary to thin it out to your desired consistency.

Ingredients

Reduced sodium peanut butter

0.333 cup(s)

Hot water

0.333 cup(s)

Fresh lime juice

2 Tbsp

Low sodium soy sauce

1 Tbsp

Sugar

1 tsp

Fresh ginger

2 tsp

Jarred minced garlic

0.5 tsp

Crushed red pepper flakes

0.25 tsp

Instructions

In a medium bowl, briskly whisk together peanut butter and hot water until smooth.

Whisk in lime juice, soy sauce and sugar until blended.

Whisk in ginger, garlic and crushed red pepper until blended. Add water, 1 tablespoon at a time, to loosen sauce, if necessary.

Transfer mixture to a serving bowl; cover and refrigerate at least 15 minutes for flavors to blend. Yields about 1 tablespoon per serving.
