This recipe is a crowd pleaser that’s perfect for game day. Serve with light tortilla chips or red pepper wedges.

Ingredients

cooked black eyed peas

14 oz, if canned, rinsed and drained

sweet red pepper(s)

½ cup(s), chopped

uncooked scallion(s)

½ cup(s), thinly sliced

fat free salsa

½ cup(s), fresh; not jarred

cilantro

½ cup(s), fresh, chopped

garlic clove(s)

1 medium clove(s), minced

fresh lime juice

1 Tbsp

dried oregano

1 tsp

Instructions

  1. Combine all ingredients in a medium bowl; stir until well-blended. Cover and chill at least 2 hours or up to 8 hours. Yields about 1/4 cup per serving.
