Ingredients
Cooked black eyed peas
14 oz, if canned, rinsed and drained
Red bell pepper
½ cup(s), chopped
Scallions
½ cup(s), chopped or sliced, thinly sliced
Salsa
½ cup(s), fresh; not jarred
Cilantro
½ cup(s), fresh, chopped
Garlic
1 clove(s), minced
Fresh lime juice
1 Tbsp
Dried oregano
1 tsp
Instructions

In a medium bowl, combine all the ingredients; stir until well-blended. Cover and chill for at least 2 hours or up to 8 hours. Yields about 1/4 cup per serving.
