This recipe is a crowd pleaser that’s perfect for game day. Serve the dip with light tortilla chips or red pepper wedges.

Ingredients

Cooked black eyed peas

14 oz, if canned, rinsed and drained

Red bell pepper

½ cup(s), chopped

Scallions

½ cup(s), chopped, thinly sliced

Salsa

½ cup(s), fresh; not jarred

Cilantro

½ cup(s), fresh, chopped

Garlic

1 clove(s), minced

Fresh lime juice

1 Tbsp

Dried oregano

1 tsp

Instructions

  1. In a medium bowl, combine all the ingredients; stir until well-blended. Cover and chill for at least 2 hours or up to 8 hours. Yields about 1/4 cup per serving.
