Preheat the oven to 350°F. Place 4 small, oven safe ramekins on a baking sheet. Coat insides of ramekins with cooking spray. Alternatively, use a large cup muffin pan instead of ramekins.

Divide the bell pepper, pico de gallo, and red onion among the ramekins.

In a medium bowl, whisk the eggs, cottage cheese, salt, and black pepper. Pour on top of the vegetables in the ramekins. Bake 15 to 20 minutes, until eggs are set in centers. Serve with hot sauce, if desired.
