Teriyaki-Glazed Ham & Pineapple Skewers

Here's a great way to use up leftover cooked ham. Fresh ginger brightens bottled teriyaki sauce. Add it at the end of cooking so the sauce doesn’t burn off from the heat.


Ingredients
Cooked lean ham
3 oz, cut into chunks
Red bell pepper
½ medium, cut into bite-size pieces
Pineapple
½ cup(s), cut into bite-size pieces
Scallions
1 large, cut into bite-size pieces (plus extra for garnish)
Cooking spray
2 spray(s)
Teriyaki sauce
2 tsp
Fresh ginger
½ tsp, finely chopped or grated
Cooked white rice
½ cup(s)
Instructions

Skewer ham, pepper, pineapple, and scallion alternately on two or three skewers; lightly coat with cooking spray.

Combine teriyaki sauce with ginger; set aside.

Grill skewers on preheated stove-top grill pan (or outdoor grill), turning occasionally, 5 minutes. Brush with teriyaki mixture and serve over rice; garnish with chopped scallions.
