We updated an old classic so that it's lower in calories and higher in nutritional value. Who knew a vegetarian sloppy joe could taste so good?

Ingredients

Uncooked tempeh

4 oz, chopped

Olive oil cooking spray

1 spray(s), or enough to coat skillet

Onion

½ medium, minced

Canned tomato sauce

1 cup(s)

Table salt

tsp, or to taste

Black pepper

tsp, or to taste

Mixed grain hamburger bun

4 item(s), toasted

Instructions

  1. Steam tempeh until softened, about 8 minutes. Transfer to a bowl and mash well with a fork; set aside.
  2. Coat a nonstick skillet with olive oil-flavored cooking spray and set over medium-low heat; add onion and sauté until very tender, about 5 minutes. Stir in tomato sauce and tempeh, and simmer 2 to 3 minutes; season to taste with salt and pepper. Top bottom of each bun with about 1/2 cup of tempeh mixture. Cover with tops and serve.
