Szechuan Green Bean Stir-Fry

Green beans always make a great side dish, and this stir-fry is no exception. It's packed with flavor and color and comes together in just 20 minutes. Just make sure you don't steam the green beans too long. You want the beans to have a bite to them for this dish. If you can't find canned bamboo shoots in your local supermarket, they are readily available to order online. You can serve this green bean stir-fry with chicken breasts that have been marinated in a teriyaki-soy mixture for a speedy, delicious supper that the entire family will enjoy.
Ingredients
Uncooked green snap beans
1 pound(s), cut into 2 inch length
Less sodium soy sauce
2 Tbsp
Ketchup
2 tsp
Red wine vinegar
1 tsp
Cornstarch
1 tsp, (dissolved with 3 tablespoons water)
Hot pepper sauce
½ tsp
Garlic
1 clove(s), minced
Canned bamboo shoots
1 cup(s), sliced, drained
Sesame oil
1 tsp

In a large sauce pan, steam green beans until crisp, about 5 minutes. Drain in a colander.

Meanwhile, in a small bowl, combine soy sauce, ketchup, vinegar, dissolved cornstarch and pepper sauce.

Spray a large nonstick skillet with nonstick cooking spray; heat. Stir-fry green beans and garlic 2 minutes; add soy sauce mixture and cook, stirring, until thickened, about 2 minutes longer. Stir in bamboo shoots and sesame oil; serve at once.
