Scallions
4 medium
Boston lettuce
1 head(s)
Uncooked green peas
1 pound(s)
Peppermint leaves
2 tsp
Salted butter
1 Tbsp
Sugar
⅛ Tbsp
Black pepper
⅛ tsp
Table salt
⅛ tsp
Instructions

Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly.

Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes).

Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
