Sweet Peas with Mint

This classic French preparation makes an elegant yet easy side dish worthy of being served to guests.
uncooked scallion(s)4 medium, white parts only, minced
boston lettuce1 head(s)
uncooked green peas1 pound(s), fresh or frozen
mint leaves2 tsp, chopped
salted butter1 Tbsp
black pepper⅛ tsp, or to taste
table salt⅛ tsp, or to taste
- Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly.
- Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes).
- Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
