This classic French dish capitalizes on one of the most underrated vegetables: peas. With this recipe for sweet peas with mint, you'll have an elegant dish in under thirty minutes. Ingredients

uncooked scallion(s)

4 medium, white parts only, minced

boston lettuce

1 head(s)

uncooked green peas

1 pound(s), fresh or frozen

mint leaves

2 tsp, chopped

salted butter

1 Tbsp

sugar

Tbsp

black pepper

tsp, or to taste

table salt

tsp, or to taste

Instructions

  1. Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly.
  2. Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes).
  3. Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
