This classic French dish capitalizes on one of the most underrated vegetables: peas. With this recipe for sweet peas with mint, you'll have an elegant dish in under thirty minutes. You won't believe how flavorful and fancy peas can be with a little love! This dish is a great complement to a light white fish or any sort of light protein because peas actually carry quite a strong flavor profile, especially when spiced up by the mint here. And, to really master this dish, make sure you serve it right after you finish the cooking process: It's best served warm and immediately!

Ingredients

Scallions

4 medium, white parts only, minced

Boston lettuce

1 head(s)

Uncooked green peas

1 pound(s), fresh or frozen

Peppermint leaves

2 tsp, chopped

Salted butter

1 Tbsp

Sugar

Tbsp

Black pepper

tsp, or to taste

Table salt

tsp, or to taste

Instructions

  1. Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly.
  2. Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes (frozen peas will take only 2 to 3 minutes).
  3. Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately
