What’s the difference between a skinless, boneless chicken breast and a chicken cutlet? Chicken cutlets are thin slices cut from the breast. Bonus with cutlets: they cook in minutes.


Ingredients
Olive oil cooking spray

Egg
1 large egg(s)
Water
1 Tbsp
Seasoned breadcrumbs
½ cup(s), Italian-style, dried
Uncooked skinless boneless chicken breast
1 pound(s), 4 (1/4-pound) chicken cutlets
Store-bought marinara sauce
½ cup(s), or low-fat pizza sauce
Part skim mozzarella cheese
2 oz, 4 ultra-thin slices (1/2 oz each)
Tomato
4 slice(s), thick slices
Grated Parmesan cheese
4 Tbsp
Black pepper
¼ tsp, or to taste
Fresh basil
4 leaf/leaves, large size, fresh leaves, thinly sliced

Whisk egg and water in large shallow bowl. Spread bread crumbs on sheet of wax paper. Dip chicken in egg , allowing excess to drip off; coat with crumbs, lightly pressing so they adhere. Spray olive oil nonstick spray all over cutlets.

Depending on air fryer settings, preheat 6- to 8-quart air fryer to 360°F or 370°F for 3 minutes. Spray basket with nonstick spray and add 2 chicken cutlets. Air fry until golden and crisp, 4–5 minutes. Lift out basket. Turn chicken over; spread 2 tablespoons pizza sauce on each cutlet and top with basil, slice of mozzarella, and slice of tomato. Sprinkle 1 tablespoon Parmesan and pepper on each cutlet.

Air fry until chicken is cooked through and crisp and mozzarella is melted, 2–3 minutes. Transfer to plate and loosely cover with foil to keep warm. Air fry remaining 2 cutlets.
