Streusel-topped oven-roasted peaches
4 medium, halved and pitted
Packed brown sugar
2 Tbsp, or whole blanched variety, chopped
1 Tbsp, cut into pieces
Fat free frozen yogurt no sugar added
1 cup(s), vanilla flavored
- Preheat the oven to 425°F.
- In a 2-quart shallow baking dish, arrange the peach halves, cut side up.
- With your fingers, rub together the brown sugar, flour, almonds, and butter until a crumbly mixture forms. Top the peach halves evenly with the streusel mixture, pressing lightly so it adheres. Bake until the peaches are tender and the topping is browned, about 15 minutes. Serve warm with the frozen yogurt. Yields 2 peach halves and 1/4 cup frozen yogurt per serving.
