In this creamy version of a breakfast staple, oatmeal is flavored with cinnamon-sugar and topped with fresh fruit. If fresh strawberries aren’t in season, the frozen kind make an excellent substitute. A splash of lemon juice can also brighten “less than ripe” strawberries and help their natural sweetness shine. And if your berries are extra-ripe, you might even want to omit the extra sugar. This high-fiber morning meal will be ready in minutes, yet leave you feeling full for hours.

Strawberries
1 pound(s), hulled, sliced
Sugar
1 Tbsp, granulated
1% low fat milk
1¾ cup(s)
Water
1¾ cup(s)
Uncooked old fashioned rolled oats
2 cup(s)
Dark brown sugar
1 Tbsp
Vanilla extract
¾ tsp
Table salt
¼ tsp
Ground cinnamon
¼ tsp
Instructions

In a medium-size bowl, toss strawberries with granulated sugar; set aside.

In a medium saucepan, bring milk and water to a simmer over medium heat. Stir in oats, brown sugar, vanilla extract, salt and cinnamon; cook, stirring occasionally, until thick, about 5 to 6 minutes.

Serve oatmeal with strawberry topping. Yields about 3/4 cup oatmeal and 1/2 cup topping per serving.
