Spicy pecan-crusted trout

We coated the fish with a mixture of oats and pecans for a wonderfully crunchy crust.

Cooking spray

Uncooked old fashioned rolled oats
½ cup(s)
Chopped pecans (unsalted, raw or dry roasted, no sugar added)
¼ cup(s)
Cajun seasoning
2 Tbsp
Fat free skim milk
¼ cup(s)
Egg whites
1 large
Uncooked trout
1 pound(s)
Instructions

Preheat the oven to 400ºF. Coat a baking sheet with cooking spray.

In a large, resealable plastic bag (or a large bowl with a lid), combine the oats, pecans, and seasoning; seal and shake well.

In a shallow bowl, mix the milk and egg white. Dip the fillets into the egg white mixture. Then place them in the bag with the topping mixture and shake until well coated (or toss in the bowl).

Place the fillets on the prepared baking sheet and bake until the fish is cooked through and the coating is golden, about 10 minutes.
