Wake up tonight's pork chops with a zesty salsa. Ready in under 30 minutes, the pineapple and dried apricots combine with jalapeño and ground red pepper for a wonderful sweet-heat that complements the richness of the pork chops beautifully. Serve with steamed rice and some steamed baby broccoli for a full meal. Try not to cut out the 30 minutes of time the pineapple mixture sits. It is necessary to rehydrate and soften the apricots and marry the flavors of the salsa. This salsa is also delicious with grilled chicken and flaky white fish like grouper and tilapia. If you like the flavors of other fruits, try subbing them in for the pineapple for new variations. We suggest strawberries and dried cranberries for a fun red version.

Combine first seven ingredients in a bowl; cover and chill 30 minutes.

While salsa chills, combine salt and next three ingredients. Sprinkle both sides of pork with salt mixture; let stand 10 minutes.

Prepare grill.

Place pork on grill rack coated with cooking spray; cover and grill 6 to 7 minutes on each side or until pork is no longer pink. Serve with salsa. Yield: 4 servings (serving size: 1 pork chop and about 1⁄3 cup salsa).
