Spiced Cauliflower Rice

Turn this side dish into a main dish by serving a fried egg over top. If you don't feel like taking out your food processor to rice your cauliflower, you can run large pieces of raw cauliflower over the large holes of a box grater. Or purchase fresh or frozen cauliflower rice at the super market.


Ingredients
Cauliflower
1 head(s), medium
Chili powder
1 tsp
Garlic powder
½ tsp
Ground cumin
¼ tsp
Ground coriander
¼ tsp
Table salt
1 pinch(es), or to taste
Black pepper
1 pinch(es), or to taste
Cilantro
2 Tbsp, finely chopped
Instructions

Trim cauliflower; cut into florets. Place florets in a food processor; process until texture and size of rice. Transfer to a microwave-safe bowl and cover with a plate, leaving a small space for steam to escape; cook on High until tender, 5 to 6 minutes.

Stir seasonings into cauliflower rice; serve garnished with cilantro.
