Fresh ripe berries, the essence of summer, are transformed into an elegant compote with a little wine, sugar and spice. The aroma alone will have your guests at the table waiting for this dish. Choose your favorite berries or mix them, as we do here, for a beautiful variety. The warm simmered blend of wine and spices thickens to coat the berries and macerate them to a wonderful tenderness. Boiling the mixture burns off all the alcohol and leaves the rich flavor of the wine intact. Serve with ice cream, sorbet or over sweet biscuits or pancakes for a brunch time treat. Add a sprig of fresh mint to for extra color and elegance.

Water
2½ cup(s)
Table wine
1 cup(s), white (or white grape juice)
Sugar
⅓ cup(s)
Whole cloves
½ Tbsp, about 8 cloves
Ground cinnamon
⅛ tsp, or 2 cinnamon sticks
Fresh ginger
½ piece(s), 1/2-inch-thick, cut into 2 slices
Lemon zest
⅛ tsp, or 1 piece lemon peel
Fresh lemon juice
1½ Tbsp
Blackberries
1 cup(s)
Raspberries
1 cup(s)
Strawberries
12 medium, halved

In a small pot, combine water, wine, sugar, cloves, cinnamon and ginger. Add strips of zest and 1 tablespoon juice from lemon half. Heat mixture to boiling. Reduce and simmer, uncovered, 20 minutes.

Transfer liquid to large glass serving bowl and cool until warm. Add blackberries, raspberries and strawberries. Let stand about an hour. Serve with slotted spoon, discarding spices and lemon rind.
