The pork gets a hint of smoky flavor from smoked paprika that plays well against the tart cherry sauce. The sauce is enhanced by cabernet wine with added complexity from the allspice. Cornstarch is a great gluten-free thickener for the sauce and it give it a wonderful sheen. Have this any night of the week or serve at your next dinner party. The deep red sauce is lovely for the holidays as well. Add some quinoa and roasted vegetables to your plate for a full meal.
