Red onion
1 large, finely chopped
Unpacked brown sugar
4 tsp
Table salt
2 pinch(es), divided, or to taste
Apple cider vinegar

Smoked tofu
14 oz, cut into 8 equal slabs
Olive oil
2½ Tbsp, divided
Sambal oelek
2 tsp, optional
Cooked medium grain brown rice
2 cup(s), warmed
Canned black beans
2 cup(s), rinsed and drained, low sodium preferred
Frisée
2 cup(s), or other lettuce
Radishes
8 small, thinly sliced
Black pepper
2 pinch(es), or to taste
Chives
¼ cup(s), snipped
Instructions

In a small bowl, combine the onion, 1 tbsp boiling water, sugar, a pinch of salt, and vinegar. Set aside.

Pat the tofu dry. Heat a grill pan over medium heat. Brush the tofu with 1 tbsp olive oil and grill for about 2 minutes on each side until golden brown. Season the tofu with the Sambal oelek, if desired.

Place ½ cup rice in each of four bowls. To each bowl, add 1/4 each of the beans, frisee, and radishes, and 2 pieces of tofu. Stir the remaining oil into the onion mixture and drizzle some over each bowl. Sprinkle each with an optional pinch each salt and pepper. Garnish with the chives.
