Slow Cooker Sausage with Potatoes and Apples

This easy, dump-and-stir slow cooker meal is rooted in Midwestern traditions, with a little Eastern European flair. We start with baby red potatoes, which hold up beautifully throughout the long cook time, and toss them with sliced chicken-apple sausage and cubed Granny Smith apples. The apples melt down to basically applesauce over time, melding with the chicken stock, apple cider, and whole-grain mustard to create a sauce that coats the sausage and potatoes; we recommend Granny Smiths for their wonderfully tart flavor.

In a 4- to 6-quart slow cooker, combine the potatoes, sausage, apples, and onion. In a medium bowl, stir together the stock, cider, mustard, salt, and pepper; pour over potato mixture. Tuck the bay leaves down into the liquid.

Cover and cook over low heat until the potatoes are tender, 6 to 7 hours. Garnish with parsley, if desired.
