Posole is a Mexican comfort food much like the American chicken noodle soup. Hominy, a deeply flavored corn product, replaces our noodles as the hearty element. This soup is chunky and satisfying like a stew with a hint of spicy heat from the pickled jalapenos. You can typically purchase pickled jalapenos in mild, moderate or hot varieties to let you regulate the kick of your posole. A fresh lime wedge comes with each satisfying bowl to add the final zing and round out the flavors perfectly. Serve with a side of avocado spritzed with lime or a quick and crunchy green salad.

Place garlic, frozen vegetables, hominy, jalapenos, tomatoes with their juice, chicken, broth, salt, cumin and pepper in a 4- to 5-quart slow cooker; stir. Cover and cook on high heat for 4 to 5 hours or on low heat for 7 hours.

Spoon posole into 4 bowls and garnish each serving with a lime wedge. Yields about 1 1/4 cups per serving.
