Sloppy Joe is another name for a loose-meat sandwich made popular at lunch counters in the 1930s. In the 1970s and 80s, these were staple dinnertime favorites for kids all over America. Our version brings back all the happy memories of rich tomato sauce with ground meat in a hamburger bun, but we have amped with veggies with added corn, bell peppers and celery. If you like a bit of heat, add jalapeno into your saute of onion, celery and bell peppers. Serve these sloppy joes with a side salad to complete the plate or some sliced apples and grapes for a fruity twist.

Olive oil

Instructions

Heat oil in a large nonstick saucepan over medium-high heat.

Add onion, celery and bell pepper and sauté until tender, 3 minutes. Add turkey and sauté until browned, breaking up the meat as it cooks, 5 minutes. Add chili powder, basil, salt, black pepper and cayenne; stir to coat. Add crushed tomatoes, ketchup and mustard; mix well.

Bring mixture to a boil, reduce heat, partially cover and simmer, stirring occasionally, 30 minutes.

Stir in corn and simmer 2 minutes to heat through. Spoon mixture onto rolls and serve hot.
