If you are a shrimp lover, shrimp salad is one of the fastest ways to get this delightful shellfish on your table. Ready in only 17 minutes, you can cut even more time off of this recipe by purchasing pre-cooked shrimp. Most fishmongers will steam shrimp to perfection while you do your other grocery shopping. Not just creamy, we have included celery for crunch, parsley for freshness and capers for a hint of brine. Serve this on a bed of mixed greens or with some crackers. Turn this recipe into chicken salad by swapping cubed, cooked chicken breast for the shrimp.


Ingredients
Uncooked shrimp
1 pound(s)
Fat free mayonnaise
0.333 cup(s)
Celery
2 rib(s), medium
Uncooked red onion(s)
3 Tbsp, chopped
Fresh parsley
2 Tbsp
Capers
1 Tbsp
Dijon mustard
2 tsp
Table salt
0.125 tsp
Black pepper
0.125 tsp
Instructions

Cook shrimp in a large pot of rapidly boiling water until bright pink and cooked through, about 2 minutes. Drain, rinse under cold water and drain again; set aside.

In a large bowl, combine mayonnaise, celery, onion, parsley, capers and mustard; mix well. Stir in shrimp; season to taste with salt and pepper. Serve at room temperature or chilled. Yields about 1 1/2 cups per serving.
