Shrimp, bell pepper & thyme frittata

Frittatas are a great way to use up small amounts of ingredients that you have on hand. Diced cooked chicken breast, cooked salmon, or shrimp make delicious additions, and almost any vegetable or herb can be incorporated to make a quick and nourishing breakfast, lunch, or dinner.

Ingredients

Egg

4 large egg(s)

Fresh thyme

2 tsp

Chives

2 tsp, chopped

Table salt

¼ tsp, divided

Black pepper

⅛ tsp

Olive oil

2 tsp

Red bell pepper

1 small, diced

Shallot

1 medium, chopped

Cooked frozen shrimp

4 oz, coarsely chopped

Preheat broiler.

Whisk together eggs, thyme, chives, 1/8 tsp salt, and black pepper in medium bowl. Set aside.

Heat oil in 10-inch ovenproof skillet over medium heat. Add bell pepper and shallot; cook, stirring, until vegetables are softened, about 3 minutes. Add shrimp and remaining 1/8 tsp salt and cook just until heated through, about 1 minute.

Pour egg mixture over shrimp mixture. Cook, without stirring, until eggs are almost set, about 5 minutes.

Place skillet 5 inches from heat and broil until frittata is set and top is golden, about 5 minutes longer. Slide frittata onto serving plate and cut into 4 wedges. Serve hot, warm, or at room temperature.
