Shrimp and Apple Slaw Wraps

Granny Smith apple1 medium, unpeeled, cored, and cut into matchstick strips
fresh radish(es)1 cup(s), sliced, thinly sliced
plain fat free Greek yogurt½ cup(s)
fresh mint leaves¼ cup(s), chopped
fresh mint leaves2 sprig(s), whole leaves for garnish
lime zest½ tsp, grated
fresh lime juice1 Tbsp
table salt4 pinch
uncooked shrimp¾ pound(s), peeled and deveined
Cajun seasoning2 tsp
canola oil2 tsp

fresh lime(s)½ medium, cut into 4 wedges
- To make slaw, combine celery, apple, radishes, yogurt, chopped mint, and lime zest and juice in medium bowl and toss to coat. Add salt to taste.
- Combine shrimp and Cajun seasoning in medium bowl and toss to coat.
- Heat oil in large nonstick skillet over medium heat. Add shrimp and cook, turning once, just until opaque in center, about 3 minutes.
- Top each tortilla evenly with shrimp and slaw. Sprinkle with whole mint leaves. Fold each tortilla in half and serve with lime wedges.
