Shrimp & apple slaw wraps

These wraps are easy to prepare and ready to go in just 20 minutes. The warm, cajun-seasoned shrimp have a spicy kick that is cooled by a terrific slaw combination of yogurt, mint, lime and apple. These wraps are equally delicious with chicken strips seasoned the same and cooked through.


Ingredients
Celery
3 rib(s), medium, thinly sliced
Granny Smith apple
1 medium, unpeeled, cored, and cut into matchstick strips
Radishes
1 cup(s), sliced, thinly sliced
Plain fat free Greek yogurt
½ cup(s)
Fresh mint leaves
¼ cup(s), chopped (plus extra whole leaves for garnish)
Lime zest
½ tsp, finely grated
Fresh lime juice
1 Tbsp
Table salt
4 pinch(es), or to taste
Uncooked shrimp
¾ pound(s), peeled and deveined
Cajun seasoning
2 tsp
Canola oil
2 tsp
Flour tortilla
4 tortilla(s), medium, warmed
Lime
4 wedge(s)
Instructions

To make slaw, combine celery, apple, radishes, yogurt, chopped mint, and lime zest and juice in medium bowl and toss to coat. Add salt to taste.

Combine shrimp and Cajun seasoning in medium bowl and toss to coat.

Heat oil in large nonstick skillet over medium heat. Add shrimp and cook, turning once, just until opaque in center, about 3 minutes.

Top each tortilla evenly with shrimp and slaw. Sprinkle with whole mint leaves. Fold each tortilla in half and serve with lime wedges.
