This one pan dinner comes together fast and is full of good for you ingredients that pack a serious nutrient punch. Watch the fish in the broiler carefully so it doesn't burn.

Ingredients

Uncooked salmon

1 pound(s), skinless, center-cut, one whole piece

Kosher salt

4 pinch(es), divided

Black pepper

4 pinch(es), divided

Broccoli

1 head(s), cut into florets

Uncooked sweet potato

1 medium, cut into fries

Garlic clove

4 clove(s)

Extra virgin olive oil

2 tsp

Whole-grain mustard

3 Tbsp

Honey

2 Tbsp

Instructions

1

Preheat the oven to 425°F. Line a sheet pan with parchment paper.

2

Place the salmon in the center of the prepared sheet pan. Season generously with salt and pepper. In a large bowl, combine the broccoli, sweet potato fries, and whole garlic cloves with the oil. Season generously with salt and pepper. Scatter the veggies around the salmon. In a small dish, whisk the mustard and honey. Pour the glaze over the salmon. (Some will run off, that is ok.)

3

Bake for 30 minutes. Increase the heat to broil and cook for 3 more minutes, keeping an eye on the salmon so it doesn’t burn.

4

Remove the salmon to a serving platter. Use a large spoon to stir the broccoli and sweet potatoes with the remaining glaze on the sheet pan. Serve.

5

Serving size: about 3 oz salmon and 1/4 of the vegetables
