Sheet-Pan Gnocchi with Turkey Sausage and Veggies

A sheet pan is our go-to for easy one-pot meals that make cleanup a breeze. In this recipe, we make our own turkey sausage to save Points, but it's as easy as stirring a few ingredients together. Feel free to substitute broccoli or cauliflower for the broccolini but don't skip the tomatoes. Once roasted, they release their juices creating a light sauce that perfectly coats the crispy, chewy gnocchi. If you can, use shelf-stable gnocchi instead of the kind from the refrigerated or freezer section, which can cook up mushier.

Olive oil cooking spray

Potato gnocchi
1 pound(s)
Cherry tomatoes
2 cup(s)
Broccolini
1 bunch(es), trimmed and cut into 2-inch sections
Kosher salt
1 tsp, divided
Black pepper
¼ tsp
Uncooked 93% lean ground turkey
1 pound(s)
Grated Parmesan cheese
1 Tbsp
Garlic
2 clove(s), grated
Italian seasoning
2 tsp
Onion powder
1 tsp

Preheat oven to 450°F. Coat a large sheet pan with the cooking spray.

In a large bowl, combine the gnocchi, broccolini, tomatoes, 1/2 tsp of salt, and the black pepper. Spray with cooking spray and toss to coat. Spread out in even layer on the sheet pan.

In the same bowl, combine the turkey, cheese, garlic, Italian seasoning, onion powder, and remaining 1/2 tsp salt. Pinch off small lumps and arrange on top of gnocchi and vegetables around the pan.

Roast 25 to 30 minutes, until tomatoes burst and turkey is cooked through.
