A little bit of wasabi paste goes a long way, providing sharp heat that’s balanced by the nutty sesame oil and vinegar.

Ingredients

Edamame in pods

2 cup(s), frozen

Unseasoned rice vinegar

1 tsp

Toasted sesame oil

¾ tsp

Prepared wasabi paste

½ tsp

Kosher salt

¼ tsp

Instructions

  1. In a small saucepan, bring 2 cups of water to a boil over medium-high heat. Add the edamame; cover and cook 5 minutes. Drain.
  2. In a medium bowl, whisk together the vinegar, oil, and wasabi. Add the edamame; toss well to coat. Sprinkle with the salt.
  3. Serving size: 2 cups

Notes

Frozen edamame pods take just a few minutes to cook. We love to steam-boil them so they stay plump, but you could also microwave them for 4 to 5 minutes to speed things up a bit.
