1 Heat canola oil in large skillet over medium-high heat. Add bell pepper and carrot and cook, stirring often, until softened, about 3 minutes. Add garlic and ginger and cook, stirring constantly, until fragrant, 30 seconds. Add turkey and cook, stirring often, until no longer pink, about 5 minutes. Add scallions and cook, stirring often, until scallions are softened, about 1 minute.

2 Stir in peas, soy sauce, sesame oil, salt, and pepper flakes and cook just until heated through, about 2 minutes. Remove from heat and stir in cilantro. Divide rice evenly among 4 bowls; top evenly with turkey mixture. Sprinkle with sesame seeds.
