Sesame Chicken and Bok Choy Stir-Fry (Everyday Delicious)

uncooked boneless skinless chicken breast¾ pound(s), cut into 1/2-inch strips
canola oil2 tsp
dark sesame oil1 tsp, (Asian)
uncooked onion(s)1 small, halved and thinly sliced
ginger root1 Tbsp, fresh, peeled, grated
garlic clove(s)1 medium clove(s), minced
uncooked bok choy5 cup(s), thinly sliced
low sodium soy sauce2 Tbsp
- Place chicken and cornstarch in medium bowl and toss to coat.
- Heat large skillet or wok over medium-high heat until drop of water sizzles on it. Add 1 teaspoon canola oil and ½ teaspoon sesame oil and swirl to coat pan. Add chicken and stir-fry until browned and cooked through, about 4 minutes. Transfer to plate.
- Add remaining 1 teaspoon canola oil to skillet. Add onion and stir-fry until golden and crisp-tender, about 4 minutes. Add ginger and garlic and stir-fry until fragrant, about 30 seconds.
- Add bok choy and water and stir-fry until crisp-tender, about 4 minutes. Return chicken to skillet. Add soy sauce and stir-fry until hot, about 1 minute. Remove from heat and stir in remaining ½ teaspoon sesame oil. (If you prefer a thinner sauce, stir in a few tablespoons water.)
