Ingredients

Uncooked boneless skinless chicken breast

¾ pound(s), cut into 1/2-inch strips

Cornstarch

2 Tbsp

Canola oil

2 tsp

Dark sesame oil

1 tsp, (Asian)

Uncooked onion

1 small, halved and thinly sliced

Fresh ginger

1 Tbsp, fresh, peeled, grated

Garlic

1 clove(s), minced

Uncooked bok choy

5 cup(s), shredded, thinly sliced

Water

2 Tbsp

Low sodium soy sauce

2 Tbsp

Instructions

  1. Place chicken and cornstarch in medium bowl and toss to coat.
  2. Heat large skillet or wok over medium-high heat until drop of water sizzles on it. Add 1 teaspoon canola oil and ½ teaspoon sesame oil and swirl to coat pan. Add chicken and stir-fry until browned and cooked through, about 4 minutes. Transfer to plate.
  3. Add remaining 1 teaspoon canola oil to skillet. Add onion and stir-fry until golden and crisp-tender, about 4 minutes. Add ginger and garlic and stir-fry until fragrant, about 30 seconds.
  4. Add bok choy and water and stir-fry until crisp-tender, about 4 minutes. Return chicken to skillet. Add soy sauce and stir-fry until hot, about 1 minute. Remove from heat and stir in remaining ½ teaspoon sesame oil. (If you prefer a thinner sauce, stir in a few tablespoons water.)
  5. Per serving (1 cup)
