Uncooked skinless boneless chicken breast
1¼ pound(s), cut into 4 equal size pieces
Garlic powder
½ tsp
Onion powder
½ tsp
Kosher salt
½ tsp
Black pepper
¼ tsp
Cooked long grain brown rice
2 cup(s)
Canned black beans
1 can(s), drained, warmed
Sweet mini peppers
2 cup(s), seeded and thinly sliced
Scallions
2 medium, thinly sliced
Salsa verde
¾ cup(s)
Instructions

Preheat oven to 400°F. Season the chicken all over with the garlic powder, onion powder, salt, and pepper.

Spray a cast iron or oven safe skillet with cooking spray. Heat on high. Add the chicken and sear 3 minutes, until golden brown. Turn chicken over and place entire skillet in the oven. Bake 15 minutes, until cooked through.

Meanwhile, toss the rice, black beans, peppers, and scallions together. Divide among 4 serving plates.

Thinly slice chicken and place on top of the rice mixture. To serve, spoon the salsa on top of chicken.
