Part waffle, part hash brown, this cheesy, savory potato recipe is the perfect pairing for bacon and eggs. Double or triple the recipe and freeze extras for another day. Reheat in a toaster oven or regular oven for a few minutes until warmed through and crispy. Coat the waffle maker with cooking spray before adding the potato mixture if the ingredients start to stick.

Frozen shredded hash brown potatoes

1 cup(s), thawed

Reduced fat cheddar cheese

¼ cup(s), shredded

Scallions

2 medium, finely chopped

Fat free skim milk

1 Tbsp

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Instructions

  1. In a medium bowl, beat egg. Add potatoes, cheese, scallions, milk, salt, and pepper; stir to combine.
  2. Spoon a scant 1/2 cup potato mixture onto a preheated mini waffle maker; cover maker and cook about 3 minutes until browned on both sides. Set aside and repeat with remaining ingredients.
  3. Serving size: 1 waffle
