Add color to your plate and bring new flavors to your family with this bright and flavorful side dish. The German-inspired flavors or cabbage, apple and caraway are a wonderful combination of earthy and fruity. The tang of the vinegar brightens the flavors of the dish. The traditional pairing for this side is pork but it is also delicious with roasted turkey or chicken. If your kids find the caraway a little strong, let them try the dish without them. The cabbage and apple have a delicious sweetness that really appeal to little tastebuds.

Ingredients

Olive oil

1 tsp

Onion

1 medium, sliced

Red cabbage

½ head(s), medium, sliced (about 5 cups)

Honey

1 Tbsp

Caraway seeds

½ tsp

Apple

1 small, peeled, cored and diced

Red wine vinegar

2 Tbsp

Table salt

½ tsp

Black pepper

¼ tsp, freshly ground

Instructions

  1. In a large nonstick skillet or Dutch oven, heat the oil. Sauté the onion until softened, about 5 minutes. Stir in the cabbage, honey, caraway seeds and 1/2 cup water. Simmer, covered, until the cabbage is barely tender, about 8 minutes. Add the apple, vinegar, salt and pepper. Cook, covered, until the cabbage is very tender, about 6 minutes longer.
