This Cajun slow cooker stew brings together sausage, chicken, and shrimp—there’s even okra (we use frozen to make things easy). Serve with rice to soak up all the flavors.

Heat oil in large heavy nonstick skillet over medium-high heat. Add sausages and cook, turning, until browned, about 3 minutes. Transfer to 5- or 6-quart slow cooker.

Reduce heat to medium. Add bell peppers, onion, and celery to skillet and cook, stirring, until softened, about 5 minutes.Sprinkle flour over vegetables and cook, stirring, 1 minute. Stir in broth and bring to boil, scraping up browned bits from bottom of pan. Reduce heat and simmer 3 minutes. Transfer to slow cooker.

Add chicken, tomatoes, and Cajun seasoning to slow cooker, stirring to mix well. Cover and cook until chicken is cooked through and vegetables are tender, 3–4 hours on Low. Taste and season with additional Cajun seasoning, if desired.

Add shrimp and okra to slow cooker, stirring to mix well. Cover and cook until shrimp are just opaque in center, about 20 minutes longer. Sprinkle stew with scallions and serve with hot sauce.
