Roasted fingerling potatoes

Roasted potatoes are a wonderful side dish for burgers, baked chicken, or grilled fish. It's one of our favorite ways to prepare potatoes because it's so easy and hands-off. You can also try this method with small red potatoes, if desired. All you have to do is combine the fingerling potatoes, minced garlic, chicken broth, fresh rosemary, salt, and pepper in a roasting pan. Let it roast away in the oven until the broth evaporates, then add the remaining broth and continue to roast until the potatoes are beautifully tender. It doesn't get much simpler than that! This recipe can be doubled or tripled for larger gatherings too.


Ingredients
Uncooked potato
12 oz, fingerling, well-scrubbed, sliced in half lengthwise
Garlic
1 clove(s), minced
Chicken broth
½ cup(s), divided
Rosemary
1 Tbsp, fresh (plus extra sprigs for garnish)
Kosher salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, or to taste
Instructions

Preheat oven to 400°F.

In a small roasting pan, combine potatoes, garlic, 1/4 cup of broth, rosemary, salt and pepper.

Roast for 15 minutes (broth will evaporate); add remaining broth, flip potatoes and roast for 15 minutes more. Yields about 1/2 cup per serving.
