This is a fantastic combination of flavors and textures that barely needs any additional seasoning. The carrots and fennel are excellent with roasted poultry, meat, or fish. It only takes 30 minutes to make from start to finish and requires just 6 ingredients. All you have to do is let the carrots and fennel roast in the oven, then season with salt and pepper, and top with some orange zest. If you want to mix things up a little bit, feel free to substitute 1 to 2 teaspoons of fresh lemon juice, 1/4 cup of minced fresh parsley, 1 tablespoon of minced fresh dill, or 1 tablespoon of minced fresh tarragon for the orange zest.
