Preheat the oven to 375°F. Spray a large rimmed baking sheet with nonstick spray. Combine the Brussels sprouts, olive oil, salt, and pepper on prepared pan and toss. Spread to form an even layer; roast until tender, stirring occasionally, about 30 minutes. Transfer the Brussels sprouts to a large bowl. Add lemon juice, if desired, and toss to coat.
