The beef sirloin is first coated in Dijon mustard before roasting for an extra layer of flavor and is ready to go in just 35 minutes. Steamed green beans are tossed with sour cream, mayonnaise, horseradish, blue cheese, fresh lemon juice, and Worcestershire sauce and make for a wonderful, colorful, crunchy side for the beef. This satisfying, savory sauce goes well with chicken, pork, and fish as well. You'll find yourself making it over and over again and using it in a variety of ways.

Ingredients

Uncooked lean trimmed sirloin beef

Dijon mustard

⅓ cup(s)

Reduced fat sour cream

⅓ cup(s)

Reduced calorie mayonnaise

⅓ cup(s)

Store-bought horseradish

Blue cheese

1 Tbsp, crumbled

Fresh lemon juice

1 Tbsp

Worcestershire sauce

Uncooked green snap beans

Preheat oven to 425°F.

Coat beef evenly with mustard and place in a baking pan lined with aluminum foil; roast for 35 minutes for medium doneness, or longer until desired degree of doneness.

Meanwhile, combine remaining ingredients in a medium bowl; chill until ready to serve.

Slice tenderloin into 1-inch thick slices and drizzle with blue cheese sauce. Yields about 4 ounces of beef, 2 tablespoons of sauce and 1 cup of green beans per serving.
