What makes this fried rice authentic is the omission of soy sauce, which is the typical way it is served in China. That said, there is nothing wrong with serving soy sauce at the table for those who enjoy a more Chinese-American style of fried rice.

Instructions

Heat oil in large nonstick skillet over high heat. Add ham, sweet peppers, and white part of scallions; cook, stirring occasionally, until peppers are tender and lightly colored in spots, about 6 minutes.

Add rice, water, salt, and black pepper to skillet and cook, breaking up rice and scraping bottom of skillet to lift up any browned bits, until rice is hot (if using leftovers or ready-to-serve rice), about 3 minutes.

Push rice mixture to one side of skillet and pour beaten eggs into empty side of skillet. Cook until eggs begin to set on bottom, about 1 minute; stir eggs and cook until set, breaking them up, about 2 minutes longer. Stir eggs and green part of scallions into rice mixture.
