Quick Beef with Greek Yogurt Sauce

This recipe is similar to the flavors of Greek souvlaki, but is much quicker and easier to make. It takes less than 15 minutes from start to finish. This version features lean ground beef that's spiced with garlic, cumin, salt, and pepper, as well as a simple, delicious cucumber-yogurt sauce. Top it all off with some fresh mint for added brightness, texture, and color. You can serve the beef and yogurt sauce with whole wheat pita or tortillas alongside for a build-your-own-adventure-type dinner, if desired.

Uncooked 93% lean ground beef

Heat a large nonstick skillet over medium-high heat. Add beef, garlic, cumin, 1/2 teaspoon salt and 1/8 teaspoon pepper; cook, stirring often, until browned, about 3 minutes.

Meanwhile, in a small bowl, stir together yogurt, cucumber, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper.

Serve beef topped with yogurt sauce and sprinkled with mint. Yields about 1 cup beef and 1/4 cup yogurt sauce per serving.
