This shredded BBQ chicken is so versatile. Serve it over a mixed greens, rolled up in a tortilla, or as part of a grain bowl with brown rice, shredded cabbage, avocado, sliced jalapeño, salsa, and a drizzle of fresh lime juice.

Ingredients

Uncooked skinless boneless chicken thigh

2½ pound(s)

Zen of Slow Cooking Smoky bbq multi-cooker spice blend

1 packet(s)

Cider vinegar

½ cup(s), or 1/4 cup (see amounts in instructions below)

Instructions

  1. To make this in a pressure cooker, rub chicken thighs with Smoky BBQ spice blend and place in pressure cooker. Pour 1/2 cup vinegar and 1/2 cup water over chicken. Secure cooker lid, seal pressure valve and cook on Manual/Pressure for 12 minutes. Vent with Quick Pressure Release. Remove chicken and shred with two forks. Serving size: about 3/4 cups
  2. To make this in a slow cooker, rub chicken thighs with Smoky BBQ spice blend and place in slow cooker. Pour 1/4 cup vinegar over chicken, cover, and cook on Low for 6 to 7 hours or High for 2 1/2 to 3 hours. Remove chicken and shred with two forks. Serving size: about 3/4 cups
