Instructions

Preheat the oven to 350°F. Line a sheet pan with parchment paper or a silicone mat.

In a medium bowl, mash the banana with a fork until almost smooth. Add the cottage cheese and mash to desired consistency. Whisk in the vanilla, salt, and egg until smooth. Whisk in the peanut butter powder until well combined. Stir in the oats and chocolate chips.

Drop the dough by ¼ cupfuls onto the prepared pan. Bake until the cookies are set and lightly browned, 15 to 18 minutes.
