Ever had a turkey burger that was dense and dry? These are guaranteed to be the opposite—and they use lean ground turkey breast. We incorporate some breadcrumbs into the mixture to help keep the texture looser, while store-bought pesto adds moisture and infuses rich herbal goodness and savory notes of Parmesan. A thick slice of grilled red onion adds a little crunch and mellowed allium flavor. You can use a stovetop grill pan if you’d like: To have everything at the optimal temperature, grill-toast the buns first, then grill the onions, and cook the chicken last.
