Romaine, green or red leaf lettuce, baby spinach, baby arugula or baby kale, Boston or butter lettuce, frisee and/or gem lettuce would all be super tasty. You can easily multiply the ingredients to yield more servings and then add in some protein, chopped veggies, cheese, nuts, or grains.
