Instructions

In a medium bowl, toss together tomatoes, ¼ tsp salt, and ¼ tsp pepper. Let stand 5 minutes. Add cheese and pepperoni; toss to combine.

In a large bowl, whisk together oil, vinegar, mustard, remaining ¼ tsp salt, and remaining ¼ tsp pepper. Add lettuce and toss gently to coat. Arrange lettuce mixture in a serving bowl; top with tomato mixture and sprinkle with Parmesan crisps.
