This recipe is a peanut buttery twist on the crispy marshmallow classics; you may even come to love this version more. These treats are also super-convenient since they can be assembled a full week ahead of time, and you'll be making more than enough to feed a crowd. All you have to do is heat up some butter spread, mini marshmallows, and peanut butter powder until it's all smooth and melty. Stir in some crisp rice cereal, then press the mixture down into a pan to compact. Let it hang out at room temperature so the marshmallow mixture has time to set, cut into rectangles, and you're ready to serve.

Reduced calorie vegetable oil butter spread

Peanut Butter & Co. Pure peanut powder

Instructions

  1. Spray a 11x17-inch pan with cooking spray and set aside.
  2. Heat a large saucepan on low heat. Melt butter spread being sure to coat the bottom of the pot to prevent sticking. Add marshmallows, peanut powder, and salt and melt on low flame. Stir until completely melted and mixed thoroughly, then remove from heat.
  3. Add crispy rice cereal to the melted marshmallows and stir until completely combined, working quickly, before the before the marshmallows cool. Press into the buttered pan with wax paper.
  4. Allow to cool and cut into 2x1-inch squares. Store in an airtight container and serve within 1 week.
