We gave fudgy boxed brownies a WW makeover. The salty-sweet PB swirl becomes Points-friendly when you use can't-live-without-it pantry staple, powdered peanut butter. Instead of oil or butter, ZeroPoint unsweetened applesauce comes to the rescue.
Ingredients
Cooking spray
1 spray(s)
Duncan Hines Dolly Parton's Fabulously Fudgy Brownie Mix
16 serving(s) dry mix, 1/16th of the package(s)
Unsweetened applesauce
½ cup(s)
1% low fat milk
¼ cup(s)
Egg
1 large egg(s), lightly beaten
Powdered peanut butter
1 cup(s)
Instructions
1
Preheat the oven to 350°F. Coat an 11 x 7–inch baking dish with cooking spray.
2
In a large bowl, whisk together the applesauce, milk, and egg. Before opening the fudge packet, knead 15 times to soften, then add to the bowl along with the brownie mix. Stir well to combine. Transfer the batter to the prepared baking dish.
3
In a medium bowl, stir together the powdered peanut butter and ½ cup water until smooth. If the peanut butter is too thick (it should be about the same consistency as the batter), stir in an additional ½ to 1 tablespoon of water. Dollop the peanut butter all over the top of the batter. With a paring knife or butter knife, swirl the peanut butter into the batter.
4
Bake until a wooden pick inserted in the center comes out with a few moist crumbs, about 30 to 32 minutes. Cool brownies slightly, then cut into 18 equal pieces.
